I can't recall where on the internet I found this recipe but it's one that I've been using for a while. It's made with precooked/leftover rice and once you have the rice cooked, it only takes about 25 minutes to make.
Here's the recipe with my notes added.
Brown Rice Pudding
2 cups cooked brown rice
1 1/2 cups milk (I use unsweetened non dairy milk)
1/4 cup maple syrup (I have substituted brown sugar)
1/2 cup raisins or other dried fruit such as cranberries or chopped apricots
Combine all ingredients in a pot and simmer for 20 minutes, stirring often.
Remove from heat and add 1 tsp cinnamon or nutmeg or all spice
Serve warm.

DeleteMmmm, that does look really good and soothing on a wet and chilly day. Rice pudding is something that doesn't sound that appealing, but with the right seasoning it can be amazing.
ReplyDeleteWhat?? Doesn't sound appealing?! I grew up eating it so maybe that's why I think it sounds yummy. I also like the option of having extra rice to give a spoonful to each of the pack as a treat on the kibble.
